Yummy Christmas Gingerbread Jumpers

So its the day before Christmas Eve and its safe to say its the eve of Christmas Eve if that's what you call it.. I have made these oh so yummy gingerbread jumpers with a not so reluctant husband and a nearly 2 year old that was more interested in eating the cookies and decorations rather than helping make them. In the end we really had a good laugh as my little girl frantically stuck the mini snowflakes on random places and me and my husband competed to see which jumper was better before he escaped to look at old football videos.

What both of them did enjoy was eating them, after my husband kept saying that they were so warm and yummy and he'll probably take part in the process of making them to see how I did it. So your probably with your family Christmas shopping is done and the gifts are bought and wrapped just turn on some Christmas music and get baking with the family its such a memorable thing to do.

Here's a simple recipe for all you Gingerbread Cookie Lovers and the best part is you can cut them into stars, actual gingerbread men, hearts or any shapes you like and you can decorate them with whatever you like. Gold candy beads and sprinkles are also cute additions but enough of the tips here's the recipe:

350g/12oz plain flour, plus extra for rolling out
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/4½oz butter
175g/6oz light soft brown sugar
1 free-range egg
4 tbsp golden syrup
To decorate
writing icing
cake decorations

Gingerbread Cookie Recipes


Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.

Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.

Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.

Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.

Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.

Cooking Time: 10-30 minutes
